Y'all, there is nothing more precious than the quiet moments spent with dear friends. One of my favorite moments of the entire trip was a morning filled with warm cups of coffee, soft light, and roaring laughs from the women that I was spending time with.
Each of us took our time to catch up on our lives that we had been neglecting for a few days - I spent time in God's word through my She Reads Truth study. Ginny, Danny, and Brooke chatted with loved ones, and Erin and Haley used their natural gifts of creativity to design a website for Erin.
I couldn't help but be that girl. You know, the one who snags her camera to snap photos of the memories that I didn't want to let fade. These women are so beautiful and each has such unique talents. I hope my photos do their smiles just a little bit of justice!
Spring means one thing to me: fresh berries and flowers! Recently, I sent M on a task to bring home as many berries as he could from his trip to the local H-E-B. He did not disappoint and brought home raspberries, strawberries, blackberries, and blueberries.
However, that is a lot of berries! In attempt to not waste a single berry (and being out of vanilla coffee syrup), I decided to use the remaining blueberries to create Blueberry Simple Syrup for use in our coffee and at-home craft cocktails.
It was unbelievably easy to create this syrup and let me tell you firsthand, it was delicious.
WHAT YOU NEED:
- 1 (One) Cup of Water
- 1/2 (One-Half) Cup of Sugar
- 1 (One) Cup of Blueberries
HOW YOU DO IT:
- Boil the sugar and water together and stir until the sugar dissolves. This should take about 3 minutes.
- Once the sugar is dissolved, add the blueberries.
- Reduce the boil to a simmer and continue to cook until the blueberries begin to break down and shrivel. This takes about 5 minutes.
- Allow to completely cool before adding to a jar and placing in the fridge. I let mine cool about 30 minutes.

M&I suffered a rainy Superbowl weekend here in San An, but it didn't stop us from spending a lot of time in one of our neighborhood favorites, Halcyon. Based out of Austin, Halcyon brings to Southtown a coffee house during the day featuring beautifully crafted lattes and a bar at night. I absolutely love the definition of Halcyon: denoting a period of time in the past that was idyllically happy and peaceful.
Halcyon is widely known for their espresso cocktails including a Long Island Ice coffee, Mochalua, and their award-winning Chocolate Espresso Martini. I love that Halcyon adds some of these delicious afternoon treats on their happy hour menu.
When you visit Halcyon during the day, you will find people tucked away in each corner of the building utilizing their free wifi. I often visit Halcyon to round out my weeks, since I typically work from home. Halcyon is a great change of scenery and luckily just a few minute walk down the street.

SNAPSHOTS:
1. I participated in the Fabulous Foodie Swap hosted by Rachel Cox of Oh Simple Thoughts. Rachel partnered me with Becca of Two Places at Once and boy, did she make a great pair! Becca and I are Florida to Texas transplants learning our new communities through food, fun, and friends. This picture is of all the Austin goodies I received this week.
2. The weather was ugly this week in San Antonio, with the exception of Tuesday afternoon where the weather hopped to 70 degrees with the sun shining high. M&I took the opportunity to walk around and explore our neighborhood some more. I posted even more pictures to my Facebook page.
3. As mentioned in the first pictures, M&I took Sunday to make a late afternoon brunch after church using all of our yummy goodies. It was divine!
4. Part of my gift basket was Texas Pecan Coffee. HOLY WOW! The smell was .. indescribable ... It was so sweet and aromatic. We tried our our French press for the first time. I will be doing an entire post on that experience.
